  • 5 ounces chinese noodles
  • 3 tablespoons peanut butter
  • 1 12 tablespoons rice wine vinegar
  • 12 teaspoon hot oil
  • 3 12 tablespoons sesame oil
  • 1 12 tablespoons soy sauce
  • 2 teaspoons sugar
  • 1 tablespoon hot water
  • 2 scallions, minced

  • Cook noodles in a large pot of boiling water, gently separating the strands with a long fork as they soften, until barely tender -- about 2 minutes.
  • Drain and rinse under cold running water to stop the cooking. Drain well and dump into a bowl and toss with .5 tbs of th sesame oil to prevent sticing.
  • In a small bowl, gradually stir the remaining oil into the peanut butter.
  • Blend soy sauce, rice wine vinegar, sugar, hot oil and hot water.
  • Spoon over noodles and toss to coat well.
  • Add scallions and toss lightly.
