Chimichurri Omelette

Just whipped this up for breakfast this morning, and can't believe I never thought of it before!

I didn't have cream, so used milk, and used margarine. I had some leftover chimichurri sauce to use, so tried this. It's pretty good, but I would either try adding a little more chimi. or some salt next time. And I will make it scrambled. I'm not that good at making omelettes! :)

Ingredients Nutrition

  • 2 large eggs
  • 1 tablespoon prepared chimichurri sauce
  • 1 dash cream
  • 1 teaspoon butter

Directions

  1. Melt the butter in a frying pan over medium heat.
  2. Combine the rest of the ingredients, mix well.
  3. Pour into heated pan, let set on one side (about 1 minute), then flip.
  4. Turn the heat off and let the omelette continue cooking in the pan for another minute.
  5. Yum!
