Chilli Jam to Go With Chargrilled Squid

"I think I saw this on a cooking program on TV. I have made the chilli jam and it is absolutely beautiful. I never cook seafood as hubby is allergic, but this chilli jam, served with the chargrilled squid looked absolutely divine on TV!"

  • Chop half the tomatoes.
  • Place in a blender then add garlic, ginger, chillies and fish sauce and blend.
  • Roughly chop the remaining half of tomatoes (not finely) and add.
  • Add the red wine vinegar, balsamic and sugar.
  • Place in a pot and bring to simmer.
  • Turn down heat and simmer for 40 minutes.
  • Stir occasionally.
  • Serve with char grilled Squid on a bed of rocket as starter.
