- 118.29 ml seeded and chopped unpeeled tomatoes
- 29.58 ml fresh lime juice
- 14.79 ml balsamic vinegar
- 14.79 ml olive oil
- 1 garlic clove, peeled
- 354.88 ml seeded and chopped unpeeled tomatoes
- 78.78 ml peeled seeded and diced cucumber
- 78.78 ml finely chopped green onion
- 29.58 ml finely chopped fresh basil
- 1.23 ml salt
- 0.61 ml pepper
- 3 ear fresh corn, cooked
- 946.36 ml tightly packed sliced romaine lettuce
- 236.59 ml tightly packed trimmed watercress
- 340.19 g cooked lobster meat, cut into bite-size pieces
directions
- In food processor bowl, add 1/2 cup tomato and next 4 ingredients.
- Process until smooth.
- Pour mixture into a medium bowl; stir in 1 1/2 cups tomato and next 5 ingredients; set aside.
- Cut whole kernels from ears or corn to measure 2 cups.
- Combine corn, lettuce and watercress in a large bowl; toss well.
- Add tomato mixture, and toss gently to coat.
- Divide evenly among 4 serving plates; top each with lobster.
