Keeps well in the fridge, for a couple of days. Extremely easy.
- 1 (12 ounce) can whole kernel corn, drained
- 1 small onion, chopped
- 1⁄2 cup chopped green pepper
- 2 tablespoons minced fresh parsley
- 2 tablespoons cider vinegar
- 1 tablespoon vegetable oil
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- Combine all ingredients. Cover and chill at least 4 hours.
