This is in response to a request. It does sound wonderful.


  1. Add the hot broth to the sieved avocado.
  2. Mix well and strain again through a sieve.
  3. Combine the cream and wine.
  4. Add the lemon juice, salt and white pepper, and just a small touch of cayenne.
  5. Add to the avocado mixture and blend well.
  6. Store in a covered container in the refrigerator and chill well.
  7. Chop the chives or dill and sprinkle on the individual servings of soup just before serving.
