Well this was a pleasant surprise! I like chili on a regular baked potato but never thought to try it on a sweet potato. It's really great! The richness of the sweet potato is great with the spicy chili and beans. I only used a little cheese and this made a great tasty lunch - thanks for sharing the recipe!
Have made this recipe twice now & decided I'd better review it before I forget! Made as written these sweet potatoes are very tasty (using a mild cheddar), & I'd happily make them again just that way! The second time instead of the chili beans, I used some of the pineapple chicken chili that I usually have frozen & that was really great! Thanks for posting this recipe!
