SOOOOOO GOOD!!! i made this a few weeks back and Im already getting requests to make again. The only thing i would do differently is tune down the red pepper if you dont like your ribs too spicy. otherwise the spices are right on.
I ended up using Guinness for the beer, and Medaglia D'Oro for the coffee part. wasnt sure how that combo was going to turn out, but they worked really well.

Excellent mixture of spices.The beer, I think helps tenderize the ribs. I used a BBQ sauce that had a strong hickory flavor - . I did cook them a little differently. I was doing them totally in the oven.. I was worreded about the 400 degree so baked them at 325F for 1 1/2 hours, opened them up and drained off the bit of beer that was left, added the BBQ sauce, sealed up the foil again and baked for a further 1/2 hour, Then I opened up the foil and let them finish for apprx 20 minutes. The coffee I used was Mexican Instant NesCafe - very strong flavor and it was wonderfull - gave a lovely mellow, bit of mystereous flavor. Thanks Wildcatter for sharing the recipe
