Oh, this is a good meatloaf!! Easy to make. Moist and very flavorful. Was great for sandwiches the next day. A definite keeper. Thanks, M&Mers!

WOW, meat loaf packed with flavour!! Very good M&Mers!! This is one of the better meat loaves we've tried and even better the next day! Made the meatloaf just as stated, just added one thing, 2 smashed cloves of garlic. Used my own homemade salsa inside and added some on top before I added the cheese. I'm making it again tonight, after dark when it's cooler and will have it cold in the fridge for a couple of cool suppers on these hot days. Thanks for sharing a keeper!!

This is fantastic. I didn't want whole kidney beans so I processed them to add the flavor but not the texture. It was great!! Thanks for a great recipe.

excellent! moist and very flavorful. all of us loved it. i used 3 pounds of lean ground beef in one loaf pan but did not double the rest of the ingredients. it turned out very nice, but next time i will double all the ingredients.

Our go to meatloaf for some time now but finally got around to taking a pic and making some comments. Go for it, not your average banquet or smorgasbord meatloaf. Way beyond that. Followed the recipe, and for us a few minor changes. Panko crumbs; mash the kidney beans, as suggested, 2 cloves of minced garlic when doing the onion/pepper, use a HOT salsa (it isn't scorching but a good nibble), and add a thin layer of salsa to the top before the cheddar for the last 10 minutes. Allow to sit for 15 minutes or so while you finish the smashed potatoes, and simmer the BBQ sauce to dizzle over both (Finger Lickin Good BBQ Sauce 10923). Make it easier with a self draining loaf pan, greased or sprayed. Loaf don't get any better than this! Thanks M&Mers!

This was good. I made it exactly as directed and it tasted great. Only problem is, and I seemed to be having this problem a lot lately, it completely fell apart. I'm thinking it's the bread crumbs I'm using. I've been lazy lately and have been using fine breadcrumbs bought ready made in a package. Next time I do this, I will go back to making my own breadcrumbs from slice bread and see if that makes the difference. Otherwise, this meatloaf was really good served with mac/cheese and a side veggie of sliced beets. Thanks for posting!!

OMG!! This meatloaf is scrumptious. Loaded with flavor is an understatement. I think the sauteed onions and peppers really add to the flavor. A moist and tender loaf. Great chili flavor, too. Thanks M&Mers.
