This recipe was originally given to be used with Southwest Scramble. This version has been reworked for the "Make It Healthier 2008" forum. It is a topping for Southwestern Scramble on the Lite Side Southwestern Scramble on the Lite Side Delectable! Merry and bright.
- 2 large tomatoes
- 1 medium onion
- 1⁄2 cup cilantro
- 1⁄2 large lime
- 1⁄2 teaspoon salt
- 1 large jalapeno (deseeded to taste)
- Chop tomatoes, jalapeno, onions and cilantro by hand, into small pieces.
- Mix together in a bowl.
- Add salt and lime juice.
- Mix thoroughly and chill in the refrigerator for about an hour.
- Remix before serving.
This has become my go-to, favorite salsa. I love its flavors, its freshness, and its ease of preparation. Sometimes I substitute small grape tomatoes or Roma tomatoes for the large tomatoes called for in this recipe, and sometimes I add fresh garlic.
