I concocted this one for a Lenten Series dinner at church in 2007. It is pretty basic, uses readily available ingredients, and minimal preparation time.

  1. If necessary, split between 2 large stock pots, splitting ingredients as you add them.
  2. Brown beef and sausage.
  3. Add onion and garlic, saute until translucent.
  4. Add tomato sauce, crushed tomatoes, chiles and spices.
  5. Simmer at least 30-45 minutes.
  6. Add kidney beans 15 minutes before finishing.
  7. Serve hot, garnished with sour cream, chopped onions, hot sauce, or cheddar cheese.

This was a very good and easy to fix chili recipe. I added more beans to it and used tomato purée rather tomato sauce. Plus, I used a little over 6 lbs of ground beef. Everyone loved it. I'm not exactly sure how many we fed as I didn't count plates but it was in the range of 35 to 45.

The chilli was great. I used black beans instead of kidney beans. But it would not have served 50. We served 35 people, 13 were children and we served it over noodles. I think it would have served maybe 25 with out the noodles. <br/><br/>Thanks so much for posting, I just wanted to share another preservative.
