    Directions:

      Heat oil in frypan.

      Add onion - cook 3 minutes till soft.

      Add chicken and garlic and ginger.
    4. 4
      Cook 7 minutes till browned.

      Break up lumps of mince with wooden spoon whilst cooking.
    6. 6
      Add capsicum and cook further 5 minutes.

      Add fish sauce and sweet chili sauce and season to taste.
    8. 8
      Stir in coriander.

      Serve with noodles or rice or toss through salad leaves.

      Made as directed except tripled the ingredients for a great super bowl appie -- I put out fresh lettuce leaves to go with and they were a hit! Thanks for posting Kate! {Made for Holiday Tag February 2010}

      Fantastic! This is a 10 star dish. Spooned into lettuce leaves and rolled up and boy was it good. Have to confess to one change, I dropped the bottle of fish sauce and it went all over the kitchen so I substituted black beans sauce for the fish sauce. Thanks so much for the post will be making these lots.

      Great flavor and taste! Am known to say "one can not have too many recipes for chicken breasts" and here I am adding yet another great tasting recipe to my family cookbook! We loved the combination. Didn't have the coriander on hand so snipped in fresh parsley - other than that made as posted for a great tasting evening meal. Think one could make this with diced chicken breasts with equally good results. Made for the Auz/NZ Swap and it's a repeatable for sure.
