Chile Rellenos Casserole

  • Preheat oven to 350°.
  • Brown turkey with onion until crumbly and brown.
  • Remove from heat and add next 5 ingredients.
  • Arrange half the chilies in 11x17 baking dish& top with half the cheese.
  • Spoon turkey mix on top, spread evenly, leaving 1/4 inch border.
  • Top with corn and arrange remaining chilies over all.
  • Top with 1/2 cup cheese.
  • Combine flour, salt and milk in bowl; add hot sauce, eggs, and whites, stirring with whisk until blended.
  • Pour over casserole.
  • Bake at 350° for 1 hour or until set; let stand five minutes.
  • Garnish with onion slices and cilantro.
  • Ole!

  1. Wow, this was wonderful! My DH and DS scarfed it down. We made it with ground chicken and fat free refried beans and omitted the red onion and cilantro (personal pref) It was mild enough for my "I don't like spice" 9 year old but I topped it with some spicy salsa for my tastes ... Thank you
