This is an adopted recipe. I have not tried it, so if you do, please feel free to offer suggestions for changes or improvements!!
- 1 cup cheddar cheese or 1 cup monterey jack cheese, shredded
- 4 ounces green chilies, drained
- 1⁄4 cup half-and-half
- 2 tablespoons onions, finely chopped
- 2 teaspoons cumin, ground
- 1⁄2 teaspoon salt
- Heat all ingredients over low heat, stirring constantly, until the cheese is melted.
- Serve warm with tortilla chips.
