This salad is right up my alley!! I used only one large chicken breast and reduced the seasonings accordingly. I decided to chop the tomato and cucumber into smaller pieces so I can eat it at my desk whilst working without needing to use a knife. As I'm not a fan of cilantro I decided to leave it out. This is such a fresh tasting salad one that I'll enjoy often with or without the chicken...Mmmm yum!! Reviewed for Fall PAC 2008.

  1. Combine garlic, ginger, cumin, salt and ground red pepper; sprinkle on all sides of chicken breasts. cover and chill 1 hour.
  2. Stir chickpeas and remaining ingredients together; cover and chill.
  3. Grill chicken covered with grill lid over medium-high heat 5 minutes on each side. cut into strips. tent with foil to keep warm.
  4. Divide chickpea mixture between 2 salad bowls and top with the sliced chicken.
