This is a very simple and delicious salad.
- 1 (15 ounce) can chickpeas, drained
- 1⁄2 onion, chopped
- 1⁄2 cucumber, sliced
- 1 small tomatoes, chopped
- 1⁄2 cup red wine vinegar
- 1⁄2 cup balsamic vinegar
- In a medium bowl combine chickpeas, onion, cucumber, tomato, red wine vinegar and balsamic vinegar.
- Mix well and serve.
Super healthy, but dressing was wickedly zingy. Only vinegar? I tried it, but drained off the extra liquid after we had it for dinner, and might try an oil and vinegar dressing next time. Pretty colors and nice to have chickpeas in salad though. One more time, with a less wicked dressing!
