Delicious! I added some avocado, which went wonderfully with it.
I used 2 400g cans of chickpeas, and everything else as listed. We loved it! The mint gave the salad a lovely touch of sweetness, and we really enjoyed the variety of tastes and textures. I'm not normally keen on a strong raw garlic flavour and the garlic did leave quite an aftertaste, and the smell of the left-overs permeated the fridge. For this reason I initially thought I'd cut the garlic to one clove next time, but the dressing is so tasty I don't know if I want to mess with it. :) Thank you for a delicious recipe!
This recipe is so incredibly easy and delicious!! Thank you Latchy for sharing it. I also add in sweet peppers, and a couple Peperoncini Peppers. Simply delish!
Very good combination of flavors and very colorful. DH had eaten the tomatoes when I wanted to do the salad, so I substituted with a little red bell pepper. The slightly sour taste of tomatoes would have been even better though. I did not crush the garlic but minced it finely and I peeled the cucumber, our personal preference. Thank you for a nice addition to my cookbook. :)
This is a delicious, easy salad for summer. I left out the mint because I didn't have any. I love the combination of flavours.
Great-tasting and refreshing, as well as very attractive salad. Finally found a chickpea recipe my husband likes ! Served this along side some very garlicy shrimp-they complemented each other perfectly. Thanks for posting !

Very good -- simple and fresh tasting! I cut down on the olive oil and added a few sliced radishes that I wanted to use up. A wonderful salad for a hot summer day. I used the leftovers as a filling for whole wheat pita pockets (just need some alfalfa sprouts and it's a great sandwich!). I'll definitely be keeping this recipe!
This was a wonderful salad for our lunch today. I used regular tomatoes cut in small pieces. I also added a tin of tuna (we like tuna in bean salads). This is a winner. Thanks Latchy.
