This is a really simple salad, very straight-forward flavors. You can add lots of extras, this is great with fresh summer produce.
- 473.18 ml chickpeas, rinsed and drained
- 78.07 ml olive oil
- 59.14 ml minced fresh parsley
- 1 lemon, juice of
- 4.92 ml salt
- Mix all ingredients.
- Chill at least 30 minutes before serving.

This is really good. I added a bit of fresh produce and some fresh mint. I used canned chickpeas, you must use a good olive oil for which I used an unrefined extra virgin olive oil and sea salt for the salt.
Delicious! I'm sure it's great as written, but I played with the ratios because of what I had on hand: an entire bunch of parsley and just a cup of chickpeas. As the other reviewer suggested, good ev olive oil shines in this recipe.
