This is a simple crockpot soup that has Moroccan flavours. It's inexpensive, flavourful, and simple but still satisfying.

Directions

  1. Rinse and sort through the chickpeas for any debris.
  2. Place all ingredients in the crockpot.
  3. Cover and cook 6-8 hours or until chickpeas are tender.
  4. Garnish each bowl with olive oil and lemon juice and your choice of remaining garnishes.

VERY tasty soup! We really liked the combo of seasonings. I drizzled some extra virgin olive oil on top & it gave it a really nice richness. Made for PAC Fall '12.
