A great summer salad.
- 2 (19 ounce) cans chickpeas, drained
- 1 large green pepper, seeded, chopped
- 2 tomatoes, cubed
- 1⁄2 cup fresh parsley, chopped
- 1⁄2 teaspoon garlic, finely diced
- 1⁄3 cup green onion
- 1⁄2 teaspoon cumin
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 1⁄4 cup salad oil
- 1 tablespoon lemon juice
- 1 (7 3/4 ounce) can salmon, drained
- Combine all ingredient is a large bow, tossing them to mix well.
- Adjust seasoning to taste.
