Chicken With Zucchini and Mushrooms

"Like Panda Express Mushroom Chicken but there are more zucchini pieces than mushrooms in this recipe."

ingredients

• 453.59 g chicken breast, cut in 1/2-inch chunks (boneless and skinless)
• 14.79 ml sesame oil
• 2 medium zucchini, cut in 1/2-inch chunks
• 113.39 g mushrooms, canned
• 29.58 ml soy sauce
• 14.79 ml wine vinegar
• 14.79 ml garlic
• 4.92 ml ground ginger

directions

1. Coat sauté pan with sesame oil and heat.
2. Add chicken and quickly brown, so as not to overcook chicken.
3. Remove chicken from pan and set aside.
4. Sweat zucchini chunks in same pan.
5. Return chicken chunks back to pan.
6. Add remaining ingredients and stiring well to infuse flavor, making sure to coat chicken evenly.
7. Serve immediately.
