Chicken With Mushroom Gravy- 'for Two'

  • 1 whole chicken breast, split (or two small chicken breasts)
  • 14 cup flour
  • 2 teaspoons ranch dressing mix
  • 2 tablespoons oil
  • 1 (10 1/2 ounce) can condensed cream of mushroom soup
  • 1 cup sour cream
  • 1 (4 ounce) can sliced mushrooms
  • 2 tablespoons white wine (Milk will work also) or 2 tablespoons chicken broth (Milk will work also)
  • 12 teaspoon salt
  • 12 teaspoon pepper
  • 14 teaspoon garlic powder
  • cooked rice or pasta

  • Mix 1/4 cup flour with 2 teaspoons ranch mix.
  • Pound 1 split chicken breast to 1/2 in thickness. Pat dry and dredge in ranch mixture.
  • Heat 2 tbs. oil in a skillet on medium heat and brown breasts on each side. (This should only take a minute or two. ).
  • When lightly browned, set into a baking dish. (I use an 8 x 8).
  • Stir together the can of mushroom soup, 1 cup sour cream, 1 can mushrooms, 2 tbs wine, salt pepper and garlic powder. Spread evenly over chicken, covering completely.
  • You can now bake at 375 degrees for 25-30 minutes, or cover and set aside to bake later.
  • Meanwhile, cook 2 servings of rice or pasta, and serve with the extra gravy.

  1. Nice flavor gravy... but WAY too salty for my taste. Served it over rice.. but I think mashed potatoes might go even better. I used cream of chicken soup and liked it that way.. but I would omit the extra salt next time.
     
  2. I made this last night and it was really good. Made some smashed red potatoes to go with the tasty gravy, some corn on the cob and garlic bread and we had a pretty good meal! The only thing that I did different was use fresh sliced mushrooms, rather than canned. Thanks for the recipe. I'm sure I'll be using it again in the future.
