  • Sprinkle chicken with salt and pepper. Add butter to large 12-inch, heavy bottomed skillet set over medium heat. When foaming subsides, add chicken pieces, skin side down. Cook until skin is golden brown and crispy, 4- 5 minutes. Turn pieces over and cook until browned on other side, about 3 minutes.
  • Add shallots, and place lemon slices on top of chicken pieces. Cook 5 minutes.
  • Pour in wine. Cover skillet and cook until chicken is cooked through, about 15 minutes. Serve chicken with pan jus, just as it is. Rice would be an excellent side dish.

I also earned a Masters in Public Health degree in 2013. After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007. I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
