- 236.59 ml water, boiling
- 236.59 ml couscous
- 236.59 ml chicken, shredded
- 78.78 ml pistachios, toasted and coarsely chopped
- 1 navel orange, peeled and coarsely chopped
- 29.58 ml fresh mint leaves, chopped
- 9.85 ml extra virgin olive oil
- 9.85 ml red wine vinegar
- coarse salt, to taste
- ground pepper, to taste
directions
- In a medium bowl, pour boiling water over couscous. Cover and let sit until tender, 5 minutes. Fluff with a fork.
- In another medium bowl, combine chicken, pistachios, orange, mint leaves, oil, and vinegar. Season with salt and pepper.
- Toss couscous with chicken mixture.

I only came to cooking in my 50s, when we moved home to a tiny town with only a few restaurants. I'm always on the hunt for easy, flavorful recipes (often ethnic cuisines), and I'm always ready to try something new and different! In cold weather I gravitate to stews, soups, and casseroles of the not-too-heavy kind; in hot weather I love a salad or cold soup. Partly because of my husband's diabetes (I'm borderline) and partly out of indolence, baking is not my thing.
