Chicken with Black Bean Sauce

  • Mix together the egg whites and cornflour and then coat the chicken in that mixture.
  • Heat the oil in a pan and fry the coated chicken until golden and cooked through.
  • Drain the oil from the pan.
  • Blend together the black beans, garlic, ginger, chilli sauce, sesame oil, soy sauce, sherry, oyster sauce and sugar for 30 seconds or until smooth.
  • Pour in the pan and heat gently until it boils.
  • Stir in the water, stock cube and cornflour.
  • Add that into the sauce and stir until the sauce thickens.
  • Toss the chicken in the pan to coat.
  • When done, sprinkle with the shallots and red pepper.

  1. I tried this recipe last night, exactly as is, and it was wonderful. The only question I had was the mention of Soya in the instructions, but no mention of soya in the ingredients list. I went with a guess and used 1 tbsp. It turned out fantastic. Even my kids loved it and they're a pretty fussy bunch. I would make this again in a heartbeat. Excellent!

This is a picture of me and my husband in Portugal, climbing up above the clouds with our bikes. Our trip may take several years so if it's urgent, it's probably better for you to post in the forums ;) Good food is really important to me -- I am happy to pay extra for food that I feel is produced in a sustainable and ethical way and always try to eat using seasonal produce. When we were in the UK we rarely shopped at supermarkets, trying instead to favour small producers, although we were very lucky in that we lived in London and there was lots of choice. We also were fortunate enough to have a weekly organic veg box delivered to our door, filled with so many lovely vegetables for very little money. It really opened my horizons in terms of the variety of vegetables I eat. If you're in the UK, check out Riverford for a box supplier as they're amazing!
