Chicken with Apple Rice Pilaf

I originally found this quick and easy recipe on the side of a box of store-brand rice pilaf mix. I was surprised at how tasty it turned out to be. My family really enjoyed the mix of flavors, and I hope yours will, too.

  1. Prepare rice pilaf mix according to package directions.
  2. While rice is cooking, saute chicken breasts with garlic and olive oil until chicken is done, about 10-12 minutes.
  3. Remove chicken breasts.
  4. Add wine, honey and Worcestershire sauce to pan with remaining juices.
  5. Add apple and simmer until sauce thickens.
  6. Add thyme to rice mixture, blend and place in serving dish or individual plates.
  7. Place chicken breasts over rice and cover with sauce.

We used 2 packages of frozen Rice Pilaf, which yielded 4 cups of cooked rice, and 1 Tbsp soy sauce instead of 2 Tbsp Worchestershire sauce. I also cut the chicken into strips, and cored the apple (left the skin on). Nice!

I cannot rave enough about this recipe! It was wonderful! An inexpensive, reasonably quick meal that tasted gourmet! I did slice the apples instead of chopping. As the apple slices softened, I scraped off the skin. I also cut the chicken into strips so the flavor of the Olive Oil would penetrate the meat better. I will be making this OFTEN! My whole family, even the baby loved it!

Variation - I've made this a second time, for someone who prefers very mild food, and I found that adding a few tablespoons of sour cream to the sauce made the sauce very mild (cutting the acidity) and more substantial. My son liked it much better this way, as well, and I think I like it best, too. :)
