Chicken Winter Casserole

- 1 onion, finely chopped
- 4 boneless skinless chicken breasts
- 2 garlic cloves, crushed
- 2⁄3 cup chicken broth
- 1 tablespoon all-purpose flour
- 3 tablespoons red wine
- 1 (14 ounce) can chopped tomatoes
- 1 teaspoon dried herbs
- 4 ounces button mushrooms
- 4 ounces carrots, peeled and diced
- salt and pepper
- 1 tablespoon fresh parsley, chopped
directions
- Preheat the oven to 375°F.
- Dry-fry the onion in a non-stick fryin pan until soft.
- Season the chicken with salt and pepper on both sides and add to the pan, lightly browning on each side.
- Remove the chicken and place in an ovenproof dish.
- Add the garlic and 2 tbs of the broth to the onion and stir in the flour.'Cook out' for 1 minute then add the remaining stock, wine and tomatoes.
- Stir in the mixed herbs, mushrooms and carrots and bring to the boil.
- Pour over the chicken and cover with aluminium foil.
- Place in the centre of the oven for 30-35 minutes.
- Just before serving, spinkle with chopped fresh parsley.
