- 2 large chicken breasts
- 1814.36 g chicken broth
- 473.18 ml broccoli, chopped
- 2 stalk celery, sliced
- 236.59 ml zucchini, chopped
- 1 small onion, chopped
- 4 clove garlic
- 2.46 ml poultry seasoning
- 4.92 ml cajun seasoning
- 4.92 ml salt
- 14.79 ml dried parsley
- 2 bay leaves
directions
- Simmer chicken, chicken broth, bay leaves, poultry seasoning, cajun seasoning, salt, parsley, garlic, celery and onions in large pot for a couple of hours or until chicken is falling apart.
- Add broccoli and zucchini, cook until tender.
- Remove bay leaves.
- Enjoy.

I made this for my work Soup Lunch due to the fact that 4 ladies are on the South Beach Diet, and I wanted to be able to incude them. It was a big hit, and many people asked me for the recipe. I did add fresh green beans cut in 1 inch pieces and also summer squash. I thought it tasted like chicken noodle soup without the noodles. Thank you for creating and sharing this wonderful recipe.

The perfect low carb chicken soup on a cold snowy evening! I chopped up a grocery store rotisserie chicken to shorten cooking time. Made homemade stock from chicken carcass, boiling with 4 cups water for 1 hour, while I prepared the rest of the soup using 1 qt boxed chicken stock. I like to saute the aromatic veggies before boiling them to sweeten their flavor. We enjoyed the seasoning as listed; will experiment with other seasonings next time. Thanks for sharing!
