Using this super easy, no-peel, "to die for " recipe, I omit the rice, add cooked chicken, (the meat from the whole roasted ones from the grocery store is awesome) and tortilla chips. A little fresh cilantro in the soup and for garnish, makes my day. Tip: Most times I just add a whole "itty" yellow squash if I don't have zuchinni, frozen chopped red and green peppers if I don't have fresh, and I can't tell the difference. I LOVE MY VITA MIX.
I added a little taco seasoning and tortilla chips, but otherwise did the recipe verbatim. I did have to run the vitamin for 7 or 8 minutes to get hot. You could start with warm broth instead to seeped it up. Awesome soup!
I made this tonight and all I can say is AWESOME!! Hard to believe it is basically water and vegetables!! I have had my Vita- Mix for 3 years and it is worth every penny. Keep posting the Vita-Mix recipes!! Julie
Oh my, this was amazingly easy and soooo delicious. The only substitution I had to make was using some chipotle powder in place of the chili, which I forgot to buy. I ate two bowls this evening (guilt-free!!) and have the rest in the fridge for lunches and snacks. This one's a keeper!
Last night I impressed my guests with the ease of making this soup. It has a long list of ingredients; however, once everything is assembled, it is so easy to put together. I left off the brown rice, used regular canned corn, omitted the olives and added some tortilla chips at the end. I garnished the soup with crushed tortilla chips and cilantro. Everyone thoroughly enjoyed it.
