From a family friend. Awesome way to use up chicken leftovers. Very yummy with mexican cheese on top!
- 3 chicken breasts
- 3 cups water
- 3 (14 ounce) cans crushed tomatoes
- 1 cup chunky salsa
- 1 dash chili powder (to taste)
- 1 dash cumin (to taste)
- Boil chicken breasts in water, shred chicken when cooked thoroughly and return to broth.
- Add tomatoes and salsa.
- Season to taste.
- Top with sour cream, mexican cheese, and tortilla strips (optional).
