  • Put the chicken, salt and lemon juice in a bowl and mix together well.
  • In a separate bowl, mix together the remaining ingredients, then add to the chicekn and stir to combine.
  • Cover and refrigerate for at least two hours, overnight if possible.
  • When ready to cook, thread onto skewers and baste with some remaining marinade.
  • Cook on the BBQ or under a hot grill for 15 minutes, turning and basting frequently.
  • Serve garnished with fresh coriander, lemon wedges and a little single cream, if desired.
