Chicken Thighs With Thyme and Lemon

A good alternative to fried chicken. Prep time does not include the time to marinade. Serving size is for 2 small thighs each.

Directions

  1. Place first six ingredients in a large zip-top plastic bag.
  2. Chill 2 hours, turning occasionally.
  3. Prepare grill or broiler.
  4. Remove chicken, discard marinade, and sprinkle with salt and pepper.
  5. Place chicken on grill rack or broiler pan coated with cooking spray.
  6. Cook 5 minutes on each side or until chicken is done.

Very good. I think the lemon was a little strong; I'll dilute with some water next time. My husband loved it as is though.
