One-Pot Chicken Taco Rice

"This is my Mom's recipe. It's really good, plus it's easy to prepare when you don't have a lot of time to cook dinner!"

  • In a large skillet, cook and stir chicken in hot oil until lightly browned.
  • Add water, tomato sauce and seasoning mix.
  • Bring to a boil.
  • Reduce heat, cover and simmer 5 minutes.
  • Add corn and red bell pepper.
  • Bring to a boil.
  • Stir in rice.
  • Cover; remove from heat.
  • Let stand 5 minutes.
  • Fluff rice with a fork.
  • Sprinkle top with cheese.
  • Serve with tortilla chips or hot floured tortillas, if desired.

  2. Our family LOVES chicken and rice tacos! I have a few substitutes however. Instead of tomato sauce I used mild salsa. Instead of chicken breast, i use ground chicken. Works a lot better! And I dont put peppers in. But that's just family taste! Overall very delicious recipe! :)
     
  3. I keep precooked shredded chicken in the freezer so I used that. I doubled the recipe but didn't use the pepper. I also used canned white corn instead of frozen. I used 2 cups of mexican blend cheese and 2 cups of brown rice. We thought it needed more seasoning so I added another packet of taco seasoning. My family also put hot sauce on their serving. We enjoyed this for something different. It was a quick, easy meal.

I only had regular long grain rice, so I adjusted my liquid accordingly and cooked for longer - still had good results (just not as fast a recipe). I added 3 cloves of minced garlic as I cooked the chicken, and I used chix stock in place of water. I left out the red pepper - I didn't have any - kids don't like it much anyway and I added 1 can of drained, rinsed black beans. We served in warm flour tortillas with lettuce, sour cream and salsa. We liked it very much, similar to a recipe I have made before, but forgotten the recipe for!! Thanks for posting. I will keep this recipe to make again, and get Minute Rice to have on hand to make this a quick, easy and tastey weeknight dinner!!!!
