- 1 (10 3/4 ounce) can Healthy Request cream of mushroom soup, undiluted
- 1 cup 1% low-fat milk
- 1 (6 ounce) package Stove Top stuffing mix
- 2 cups cooked cubed chicken breasts
- 1 (12 ounce) package steamfresh broccoli florets, cooked according to package directions
- 1 (8 ounce) jar mushrooms, drained
- 1 1⁄2 cups shredded reduced-fat Mexican cheese blend
directions
- In a large bowl, combine soup and milk until blended. Add the stuffing mix with contents of seasoning packet, chicken, broccoli, mushrooms, and 1 c cheese. Transfer to a greased 9 x 13 baking dish.
- Bake, uncovered, at 375 for 20 minutes or until heated through. Sprinkle with remaining cheese, bake 5 minutes longer or until cheese is melted.

This was a cinch to put together. I normally make this with gravy but minus the broccoli and cheese. I had everything on hand but used fresh mushrooms that needed to be used up that I sauteed in a little butter. Not cooking the stuffing ahead of time saved a pan to wash. Seems like it needs something else flavor-wise. Hubby said it was a 3 but I'm giving it a 4 for sheer ease of fixing a dinner. It was a fast and easy meal. Thanks for a different twist.
