I make this soup a couple times a month. It is light but still tasty. This recipe is what got me to start cooking with spinach! Even my kids enjoy it (my 4 year old won't eat the spinach of course but LOVES the gnocchi and chicken, my 1 year old will eat every bite). And even my husband, who is a soup-hater (why, I'll never understand), adores it.

I substituted vegetable bouillon and white wine for the chicken broth, added mushrooms and onions. I chose to cook the gnocchi in the soup. YUM! I'll do this again.

SO good! I make a vegetarian version of this soup with margarine and Qorn's chicken tender substitute (found in the freezer section of my natural market). I made this for a work party, and have had numerous people ask for the recipe.

Because i am a diebetic and have to purchase or make things without sugar, i find this receipe excellent. Until people become diabets they dont appreciate the good foods without sugar. Al

I'm usually very hesitant to criticize another recipe and to possibly hurt someone's feelings, but feel I must say something about this one. This had no flavor even with the addition of bouillon and onions (which I strained off). My family would not eat this, the kids ask for cereal instead. This was a very bland soup and I will not be making it again.
