Sorry!! but this quiche just never set, it was still milky after baking it an extra 25 minutes, a total of 45 minutes, I wondered if your 20 minute cook time was a typo. I really think 1 1/2 cups milk was just too much what with the moisture from the mushrooms too, I used fresh spinach and 3 extra large eggs. We felt there was too much in it also, I used a large, deep corningware quiche dish, 23cm,and it still spilled over into the oven as it cooked. The concept was good and it did have good taste, even with the soupy texture.

  1. Preheat oven to 325 degree
  2. Place onions in saucepan, top with chicken and basil and cover with white wine, lemon juice, and chicken broth
  3. Bring to boil, reduce heat and poach 12 minutes
  4. Remove chicken from pan, allow to cool and dice
  5. Beat eggs and milk together
  6. Spread chicken, cheese, msuhrooms, and spinach in pie shell
  7. Pour egg mixture into pie shell
  8. Bake for 20 minutes (until top is golden and center is set)
