For Chicken Marinade
- 1 teaspoon minced garlic
- 1 teaspoon lemon juice
- 1 teaspoon olive oil
- 1⁄2 teaspoon dried oregano
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 1 lb boneless chicken breast

For Dressing
- 1⁄2 cup plain fat-free yogurt
- 1⁄4 cup grated peeled cucumber
- 1 teaspoon white wine vinegar
- 1 teaspoon minced garlic
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon cayenne pepper
- 1⁄4 teaspoon black pepper

Salad Fixins
- 3 cucumbers, peeled and cubed
- 1⁄2 red onion, sliced
- 1⁄2 cup crumbled feta cheese (I actually like more)
- 1⁄2 cup chopped kalamata olive (again-I like more!)
- 1 tomatoes, seeded and cubed
directions
- Mix all of the marinade ingredients in a bag with the chicken.
- Shake to coat.
- Original recipe didn't call for any marinade time, but we marinated for a couple of hours.
- Broil, grill, or pan fry chicken until done.
- Set chicken aside to cool slightly.
- Cut chicken into 1-inch pieces.
- Combine all dressing ingredients together in a bowl.
- Mix well.
- Combine chicken with salad fixins; pour dressing over all and mix well.
- Enjoy!

This was excellent! It was hard to scale down for just 1 but I managed! I used a little more olive oil & added some oregano & onion powder to the dressing. I will use more yogurt & cucumber so I can have more dressing cuz it was good! I didn't use any vinegar; I just spaced it! Lettuce isn't mentioned in the salad but I used about 1 1/2 cups, plus the cucumbers, red onions & low fat feta. Very, very good!

This was too die for! I LOVE greek food and this has it all! The ONLY thing I did different was to use red wine vinegar because that was all I had on hand. This is fabulous served cold on lettuce leaves or in Pita bread. I will be making this often! The ingredients are light and refreshing, and very healthy! I would give this more than 5 stars if I could! Bravo!

I really enjoyed making this, and found it very easy to do so. I've made it a couple of times. Once I put it over lettuce, and added both the tzatziki sauce and a dash of Newman's Lighten Up Rasberry and walnut salad dressing, and another time made it over a pita(minus the Newman's). Both times it was delicious!

Mmmmm....this was SO yummy. Hubby and I were in the mood for Greek food so I gave this a try and we were not disappointed. I used my Penzey's Greek seasoning blend in the marinade in place of the seasonings listed. It basically is the same stuff but with the addition of lemon peel and marjoram. I didn't have any cayenne for the dressing but honestly we didn't miss it. I cubed the chicken before marinating and then grilled it in my cast iron grill pan and it was delicious! We kept sneaking bites before I had the rest of the salad ready. Even my 3 yo DS loved it! We'll definitely be making this again. Thanks for a great recipe!
