This recipe was in the 'food' section of our local paper a couple of weeks ago. We made it while on a camping trip, a very refreshing and different salad! It has a definite Greek taste and is very low-cal! Time does not include marinating (if you chose to do so).

  1. Mix all of the marinade ingredients in a bag with the chicken.
  2. Shake to coat.
  3. Original recipe didn't call for any marinade time, but we marinated for a couple of hours.
  4. Broil, grill, or pan fry chicken until done.
  5. Set chicken aside to cool slightly.
  6. Cut chicken into 1-inch pieces.
  7. Combine all dressing ingredients together in a bowl.
  8. Mix well.
  9. Combine chicken with salad fixins; pour dressing over all and mix well.
  10. Enjoy!

What a delightful salad this was. Very refreshing and easy to prepare. I especially liked the dressing. I served it with Arabian Pita Bread #17977. My hubby enjoyed it immensly, too! Thanks!

This was a delicious salad both hot and cold! The dressing was like a spicy tzatziki sauce which went very well, especially with the olives. I enjoyed stuffing this into halves of pita bread and eating it like a sandwich as well. Very tasty! Thanks for a wonderful recipe!

This was excellent! It was hard to scale down for just 1 but I managed! I used a little more olive oil & added some oregano & onion powder to the dressing. I will use more yogurt & cucumber so I can have more dressing cuz it was good! I didn't use any vinegar; I just spaced it! Lettuce isn't mentioned in the salad but I used about 1 1/2 cups, plus the cucumbers, red onions & low fat feta. Very, very good!
