- 5 cups chicken broth
- 1 cup long grain rice
- 2 cups frozen peas
- 1 egg
- 2 cups shredded chicken
- scallion
directions
- Heat broth in a large stockpot. Add the rice and peas, simmer 18 minutes or until rice is almost tender. Whisk in egg and then add chicken. Heat through, garnish with scallions and server.
