Chicken Smothered With Apples & Onions

- 2 apples, sliced
- 1 onion, sliced
- 29.58 ml water
- 14.79 ml margarine
- 0.25 ml cinnamon
- 14.79 ml cornstarch
- 59.14 ml white wine
- 2 chicken breasts
- 14.79 ml margarine
- salt
- pepper
- 14.79 ml brown sugar (optional)
- garlic powder
directions
- Heat a sauce pan to medium.
- Peel and slice the apples into small chunks.
- Slice the onion.
- Add the margarine to sauce pan.
- Add the onions when margarine has melted.
- Cook until softened - about 5 minutes on medium heat.
- Add the water, apples and cinnamon and cook until soft - about 10 minutes.
- If the apples are tart, add 1 tbsp brown sugar.
- While the apple mixture is cooking, heat a frying pan to medium.
- Add the margarine.
- Season chicken breasts with salt, pepper and garlic powder to taste.
- Add the chicken to the frying pan and brown on both sides - about 10 minutes.
- Mix cornstarch and wine together in a bowl.
- When the chicken has browned on both sides but is not fully cooked, add the cornstarch and wine mixture to the frying pan.
- Stir to loosen any bits from the pan.
- Add the apple mixture to the frying pan and stir until wine and apple mixtures are combined.
- Cover the chicken with some of the apple mixture and lower the heat a bit until chicken is fully cooked - about 10 more minutes.
- Serve with apple mixture spooned over chicken.

The kids either hated it or loved it. Grad hates sweet flavored meat and Fire (8) hates cooked apples. All the rest of the clan loved it. Everyone felt that, cooked with Granny Smith, it did not need any brown sugar next time. Also, tripled the recipe but I'll only be doubling the apple/onion sauce next time. Have a pan full left over.

Fantastic! The flavor was wonderful. I used a really sweet Gala apple, so I omitted the brown sugar, but added a little extra cinnamon. Like the previous reviewer, I also cooked it all in one pan to save on dishes, and it worked out quite well. I served it with a nice green salad and Recipe #248074. Thanks for a great recipe!

Love to try new recipes......this website is the best ! I have tried several others but always end up coming back here ! It's now one of my favourites....and the first place I go for any meal suggestions !
I tend to use recipes as guidelines rather than the exact way of doing cooking. Cooking should be fun and experimental...at least I think so...to give you something a bit different every time you make a recipe. I know that many of my recipes never turn out the same way twice....if they do then I did something wrong!
