Chicken Satay With Spicy Peanut Sauce

This recipe has been handed down and I can't remember source it's been too long.

  1. Cut chicken into chunks if thighs strips if breasts.
  2. Combine with remaining ingredients and leave to marinate in refrigerator anywhere from 1-12 hours.
  3. Satay Sauce- Heat oils in small saucepan, add onion, garlic, ginger and saute over med heat until softened.
  4. Add vinegar, sugar and continue to cook until sugar dissolves.
  5. Remove from heat and stir in remaining ingredients.
  6. Adjust seasoning to your taste.
  7. Can also be put in a food processor for a completely smooth sauce.
  8. To Serve- Preheat oven to 375.
  9. Thread chicken onto skewers and arrange on baking sheets.
  10. Bake for 5- 10 minutes or until just cooked.
  11. Serve with Satay Sauce.
  12. Substitute Beef, lamb, shrimp, pork or scallops.
  13. If Sauce gets to thick if made in advance thin with hot water.

Wonderful recipe! I marinated my chicken for 24 hours. I couldn't stop sampling the spicy peanut sauce as it was so good. I am really glad that I searched the chicken satay recipes and found this one. Fantastic flavor. Very authentic-tasting.
