This is a great meal to cook a lot of and freeze the rest for the days you don't fill like cooking!! I garnish with taco sauce, cilantro, sour cream, lettuce and tomatoes

- In a medium pan, simmer chicken in the salsa till chicken falls apart or shreds and most of the juice from the salsa is absorbed.
- (For faster results I shred the chicken with 2 forks).
- Spoon the chicken into the tortilla with about a 1/4 cup of shredded cheese.
- Roll and bake at 375° for about 30 minutes.
