This is a recipe that my Memere used to make all the time, and it reminds me of her. It's simple, fast, and so yummy.
- Heat Oven to 375.
- Spoon a thin layer of salsa on the bottom of cookie sheet.
- put a single layer of chicken on top of salsa, and spoon more salsa ontop of chicken.
- Bake for 25 minutes.
- Flip chicken over, and bake for another 20 minutes, or untill juices run clear.
I make this quite often. It's so moist and delicious! I don't cook it as long because I use boneless, skinless breasts. I've never put salsa on the bottom but I think I'll try that this weekend!!
So easy and really tasty. I sprinkled some cheddar cheese on top during the last few minutes of cooking and served it with a dollop of sour cream. Thank you for a great recipe that works for my crazy schedule!
