Chicken Salad With Scallions and Yoghurt

"Tasty and healthy alternative to the mayonaisse-based versions. Calls for poached breast halves; I used rotisserie chicken, which was just fine! Don't know where I got this recipe from; apologies to the creator. Time doesn't include poaching the chicken, since I didn't!"

  • In large bowl, stir together scelery and scallions, yoghurt and basil. Season with salt and pepper.
  • Fold in chicken breast halves, cooled and shredded.
  • Season with salt, pepper, and fresh lemon juice to taste.
  • Serve over greens or in a sandwich or wrap.

I only came to cooking in my 50s, when we moved home to a tiny town with only a few restaurants. I'm always on the hunt for easy, flavorful recipes (often ethnic cuisines), and I'm always ready to try something new and different! In cold weather I gravitate to stews, soups, and casseroles of the not-too-heavy kind; in hot weather I love a salad or cold soup. Partly because of my husband's diabetes (I'm borderline) and partly out of indolence, baking is not my thing.
