Vegetarian Times May 97. I like it with homemade bread.
- 1 lb chicken seitan strips
- 1⁄3 cup grated carrot
- 1 stalk celery, minced
- 1⁄3 cup minced red onions or 1⁄3 cup minced green onion
- 1⁄3 cup pecans (optional)
- 1⁄3 cup mayonnaise or 1⁄3 cup vegan mayonnaise
- salt and pepper
- 8 slices bread
- lettuce leaf, to garnish
- tomatoes, slices to garnish
- Cut seitan into bite-sized pieces.
- In large bowl, mix seitan and remaining ingredients.
- Serve on bread with lettuce and tomatoes.
- Note for Vegan use the Vegan Mayo. Why? Regular mayo contains eggs.
