My husband loves this for lunches. He will often ask me to make it. Since it is just me and my husband I will make a whole chicken for dinner and make this with the leftovers. It is also a great dish for all that leftover turkey from Thanksgiving.
- 1⁄2 cup mayonnaise
- 1⁄2 teaspoon celery salt
- 1⁄4 teaspoon pepper
- 1⁄2 teaspoon onion powder
- 2 cups cut up cooked chicken or 2 cups cooked turkey
- Mix first 4 ingredients together.
- Toss with chicken or turkey.
- Cover and refrigerate at least 3 hours.
3/30/04: Very good. I had some leftover grilled chicken and this was perfect. Just the right balance of seasonings. Thanks. UPDATE 11/7/08: This is my favorite basic chicken salad recipe. Depending on my mood, I add different ingredients. This week I added 1/2 of a chopped orange bell pepper, some fresh parsley, parmesan cheese, dry mustard. Definitely make time for the 3 hours chill time, the flavors are much better.
I like the blend of seasonings, especially the celery salt. I also added a couple of diced boiled eggs. Thanks!
