Chicken Salad

"This is THE best chicken salad I've ever had. I got the recipe from my friends mom. It's simple, not a lot of ingredients, but I like it that way. I was raised on Salad Dressing, but I prefer this made with real Mayo. I'm usually one to add onions or garlic to something like this, but I prefer this just the way it is!"

  • Boil chicken until cooked through and no longer pink, then shred.
  • Mix all ingredients together in a bowl.
  • Enjoy on bread, crackers or with a spoon!

  1. Made this with seedless red grapes & used lemon pepper instead of the 4 seasonings! I also started out with just 1/2 cup of mayo & then add a small additional amount!   2. This is excellent! The grapes add a fantastic taste as do the cashews. Very popular at a recent lunch I attended.
     
  3. This was just excellent. The flavor combination was perfect for us. Loved the grape addition. I used honey roasted peanuts as that is what I had and that was perfect for us. Used 1/2 tsp of onion powder and 1/2 tsp of garlic powder. I did, after my initial taste test, add red chopped onion as I like that in my chicken salad. I served this as a snack with Club crackers. So good. Made for PAC Spring 2011
     
  4. I scaled this down to one sandwich and it worked fine. I loved the flavor combinations! The salty cashews really gave this chicken salad an extra boost over others I've had. Thanks so much for sharing it!

I am a mother of 3. One boy (8) and two girls (6) and (1). I'm a stay at home mom who runs her butt off! I love to cook, when I have time. It's fun to experiment with new recipes and ideas. I like to try "fancy" dishes sometimes, but on a day to day basis I just cook pretty plain and normal, like burgers, spaghetti, etc. Got to keep the kids happy and full!
