- 3 boneless skinless chicken breasts
- 2 cups uncooked garden rotini pasta
- 2 garlic cloves, minced
- 2 cups broccoli florets
- 1⁄2 cup water
- 1⁄2 red sweet bell pepper, julienned
- 1⁄2 yellow bell pepper, julienned
- salt and pepper
- 1⁄4 cup parmesan cheese
directions
- Cook the rotini per package directions.
- Cut the chicken breasts into bite-sized cubes. Add salt and pepper. Place in hot, oiled skillet with garlic and cook until done through. Add broccoli and water and cover skillet. Cook on high heat for 5 minutes or until broccoli is tender and water is gone. Add peppers, rotini and parmesan cheese. Mix together and serve.
