I LOVE this recipe. It's so decadent! Pancetta is pretty expensive (and they sell it in small quantities) so I often use less than is noted in the recipe, but the flavor has not suffered.

Eager to try this fantastic-sounding recipe! But will do so with Dreamfield Pasta's Penne Rigate with only 5gms. of digestible carbohydrate per serving, making this a truly lo-carb recipe! http://www.dreamfieldsfoods.com/low-carb-pasta.html

This was soooo good. I had never made chicken riggies before (nor had I ever eaten them) This recipe was easy and delicious. It was somewhat salty, next time I will omit the salt that it calls for and rely on the saltiness of the panchetta. I also added 1 can of stewed tomatoes and about 1/2 pd. of sauteed mushrooms. This recipe is definately a keeper!

I first made this recipe when I found it in a Paula Deen magazine my boyfriend got me. It is super easy to make and tastes out of this world! If you made this for company, they would never want to leave! I could eat it every day! I highly recommend it.
