Easy chicken and rice, with no cream of soups and no glutens.
- Place chicken in 9x11 pan, then top with broth, rice and peas.
- Bake at 350°F for 2.5 hours or till chicken is done.
This was simple and easy to make. But I think I cooked it a little too long (at 2 hours) because the chicken was dry. And I should have stirred it mid way to make sure all the rice cooked - the rice on top was hard and crunchy. Will probably try again with these modifications.
