This recipe looks like it is complicated, because it has so many ingredients, but it's not. Most of the ingredients are the spices and herbs that make the dish so great. Actually, it is a very simple and easy recipe.

  1. Preheat oven to 350°F.
  2. Combine first 12 ingredients in a shallow bowl.
  3. Place the chicken in a bowl and pour the 3 tablespoons oil over chicken and coat well.
  4. Coat the oiled chicken with the breadcrumb mixture.
  5. Place on a greased cooking sheet.
  6. For the potatoes, combine the last 4 ingredients.
  7. Coat the potatoes with the 1 teaspoon oil and then coat with the seasoning mixture.
  8. Place around chicken on same baking sheet.
  9. Bake, covered for 1 hour, or until potatoes are done and chicken juices run clear.

Second time using this reipe. Great.

I decided to make these for ZWT and I was pleasantly surprised at how easy this was and even better it was very moist. I used chicken thighs and Italian seasoned bread crumbs so I did not add the extra parsley or oregano but used all other spices. The results were fabulous!

Such a simple recipe with great flavor, especially the potatoes. I used just thighs. :)
